black been and green chile cheddar cheese blue corn soft tacos

I just ate the most delicious simple meal.

I'm sorry I didn't take a picture of it.

Ever since last night I've been craving black bean and cheese soft tacos, and all day today those soft tacos were on my mind, making me so hungry even after I ate my breakfast bowl of steel cut oats, my mid morning snack of two hard boiled eggs, and my lunch of a salad and not one, but two cupcakes! (Lisa made them, and brought them for everyone, and boy they were delicious, too.)

I got to the co-op after class, and the library, and bought me a can of black beans and some green chile cheddar cheese from Tucumcari. I was so hungry after shopping, and the travel walking to and from the library with my heavy school bag that I sat outside the coop on a picnic table and ate a small pouch of dried mangos and two oranges.

When I got home, I took Nina out for out daily afternoon walk, and ate a thick stick of black licorice.

By the time we got home 40 minutes later, I was famished again, and could barely wait for my black beans to heat up, and my blue corn tortillas to head up in the pan.

I cut some onion, and cut several pieces of the green chile cheddar, and when the blue corn tortillas were hot and steamy, I laid the cheese on them to melt. The beans boiled, and I found some hot gringo salsa in the fridge to garnish my healthy, delicious tacos. I ate 6 of them, and then felt like a happy queen.

Now, I am preparing for a good three hours of homework. I know my tacos will get me through. What am I eating tomorrow? Well, I bought beets, and would like to roast them before I leave for Taos on Friday with the few puckering potatoes in my fridge. Tomorrow night: root vegetables.
